Mini choux pastry puffs filled with fresh cream, rolled in chocolate and hazelnut cream, made into a tower (like the profiterole), sprinkled with chocolate flakes and dusted with icing sugar.

Croquenbouche
Mini choux pastry puffs filled with vanilla custard ONLY, dipped in toffee and shaped into a tower, decorated with spun sugar and fresh strawberries.

St Honre
Mini vanilla custard bigne dipped in toffee OR chocolate, placed around the edge of a puff pastry disc. A layer of vanilla custard is piped inside the entire centre of a vanilla sponge soaked with liqueur. Three types of creams are piped into the centre. Decorated with chocolate flakes and strawberries.
